Caribana is a festival of Caribbean culture and traditions held each summer in the city of Toronto, OntarioCanada. It is an event that has been billed as North America’s largest street festival with more than a million visitors each year. The event will start on the 17th of July and it will end on the 5th of August.

We all know that music is an important part of Caribbean culture. The types of music that are associated with this event are Calypso, Soca, Reggae, Dancehall and with a combination of Hip Hop and R&B. With these types of music, I’m sure everyone will be busy dancing and street partying! Aside from music, magnificent and extravagant costume is one of the main attractions for this occasion. It only shows how brilliant and colorful Caribbean culture and heritage is.

The famous Curry Chicken from Trinidad and Tobago. This delicious dish was introduced to the islands by indentured Indian workers. The dish was very similar to the chicken curry dish of India, compromising mostly of curry with few chicken pieces. However, poultry in Trinidad and Tobago was so readily available the dish began consisting of mainly chicken, spiced with curry. Curry chicken will make your mouth on fire!

The Caribbean Curried goat is a popular dish in Jamaica which is served at festivals and parties. It is almost always served with rice and, in restaurants in North America and Great Britain, other typically Carribean side dishes such as fried plantain may be served as an accompaniment. Curried goat on a steaming hot day, what more could you want? Everybody loves curried goat!

Jerked Chicken is a priceless traditional recipe of Jamaican cooking in which meats are marinated in a unique blend of herbs and spices, and then char grilled to succulent perfection. It is a popular recipe among spicy food fans all over America. This amazing chicken recipe is great paired with cold and crunchy coleslaw.

Craving for fried fish Caribbean style? Well, the Caribana Festival is the best opportunity for you to taste it! Fried fish is favorite dish among Caribbean islands, especially at Carnival time. Crispier, the better!

Another Caribbean classic dish is the chicken stew. It is well seasoned and the sauce should not be as thick as a curry and not too watery. It is always best served with rice and peas and West Indian pepper sauce.

Everyone loves roti! It is the fast food of the Caribbean especially in Trinidad. There are popular types of Roti like Dhal Puri, Paratha Roti, Sada Roti, Dosti Roti, Aloo Roti and Pepper Roti.

Oxtail with Rice is a main dish which is popular in Jamaica and Trinidad. It is the culinary name for the tail of cattle. Formerly, it referred only to the tail of an ox or steer, a castrated male. It typically weighs 2 to 4 lbs. This is best on rice, mashed potato, roasted breadfruit, even roti or bread.

Ackee and saltfish is a traditional Jamaican dish, internationally known as Jamaica’s national dish. It is usually served in breakfast and. Ackee tastes and looks like scrambled eggs, it’s creamy when cooked with natural notes of sweetness that contrasts well with the saltiness of the saltfish, sauteed with onions, tomatoes, sweet, hot & black peppers and herbs. This is a dish that is much sought after at home and abroad.
